		<description>This is one of my favorite throw together dishes.  Oh how I miss having an oven I can really cook in.  A toaster oven is a pain.


&lt;em&gt;Sweet and Sour Make Ahead Chicken&lt;/em&gt;


2 pounds chicken parts (I skin them)
16 oz bottle sweet and sour sauce
1 envelope dry onion soup
1 c peach or apricot preserves
1 can drained pineapple chunks

Mix sweet and sour sauce, onion soup, preserves and pineapple.  Pour over chicken.  Marinate at least 1 hour.  Bake in a 350 degree oven until chicken is done, about 1 hour.</description>

		<description>Hummus 
Serves 6-8 as a dip for crackers or vegetables or as a spread for your veggie wrap or sandwich spread 

Ingredients
1 - 15 oz can chickpeas drained or substitute 2 cups sprouted chickpeas for the canned ones
2 cloves garlic minced
Juice of 1 lemon
½ teaspoon sea salt
2 tablespoons tahini
2 Tablespoons extra virgin olive oil

Place all ingredients in your food processor with the S blade and puree to desired consistency. I generally add a little purified water to get a nice creamy consistency. 

Taste and adjust flavors to your individual liking.

For variety try adding ½ cup fresh parsley and ½ teaspoon cumin for a more Middle Eastern flavor.

Its the only one of the two posts in my &quot;Eater&#039;s Paradise&quot; category.  You&#039;ll find it easily.

Others are a bit complicated but you should try making Biryani, preferrably Chicken though Mutton works too. You&#039;ll find a plethora of recipes if you do a google on that. Oh and try some Chhole too [chana masala], delicious if you like spicy things, its my fav veggie dish.</description>

		<description>I know you don&#039;t want fish recipes but do note that you can substitute the shrimp with &lt;strong&gt; chicken&lt;/strong&gt; and be creative with the veggies. Try using zucchini, celery, bamboo shoots, etc. 

Shrimp Pancakes
Pancakes
2 cups All-purpose flour
1 1/2 cups Water
2 Eggs
1/2 lbs Shrimp, finely chopped
3 ounces Green onions, trimmed, quartered lengthwise, and cut into 2-inch lengths
1 small Carrot, cut into fine julienne
2 tsp minced Garlic
1/2 tsp Salt
8 tsp Vegetable oil (extra virgin olive oil is best)
Chives, for garnish, optional

Sauce
2 tsp Soy sauce
2 Tbps Vinegar
1 tsp Sugar
1/4 tsp Crushed red pepper
2 tsp lightly toasted sesame seeds

Instructions
In a mixing bowl, combine the flour, water, and eggs and mix gently until just combined. Add the shrimp, green onions, carrot, garlic, and salt and fold together briefly just to combine.

Heat a large nonstick skillet over medium-high heat and, when hot, coat with 2 teaspoons of the vegetable oil. Add 1/4 of the pancake batter and use a spoon to spread into a 6 to 8-inch circle, trying to get the filling ingredients as evenly spread out as possible.

Cook about 4 minutes and once the pancake has begun to set and is golden brown on the bottom, flip the pancake to the other side, pressing with a spatula to compress ingredients.

Cook until golden brown on the second side, about 2 minutes longer, transfer to a warm plate and cover loosely with foil to keep warm while you prepare the remaining pancakes.

Once all of the pancakes are ready, cut them into wedges and serve warm, sprinkled with the chives and with the dipping sauce in small bowls for dipping.</description>
