Cooking and some free rice

As I was cooking dinner tonight I started to think. I love cooking, I love mixing things together and see how they work out. I love trying new things and I love cooking for other people. So why don’t I cook more often?

I suppose one of the reasons is that I just don’t know what to cook. Yes, there are recipes everywhere, but I’ve never been one to follow cookbooks, but rather just cook something.

However I am planning to change that for the first two weeks in December and cook something different every day. That also means I need some simple recipes that don’t include fish or mushrooms. And this is where all of you come in:

Recommend some simple cooking recipes to me.

As we’re on the subject of food, I’ve found this on sulz’s blog who had it from ellaella’s blog:

    I know you don’t want fish recipes but do note that you can substitute the shrimp with chicken and be creative with the veggies. Try using zucchini, celery, bamboo shoots, etc.

    Shrimp Pancakes
    2 cups All-purpose flour
    1 1/2 cups Water
    2 Eggs
    1/2 lbs Shrimp, finely chopped
    3 ounces Green onions, trimmed, quartered lengthwise, and cut into 2-inch lengths
    1 small Carrot, cut into fine julienne
    2 tsp minced Garlic
    1/2 tsp Salt
    8 tsp Vegetable oil (extra virgin olive oil is best)
    Chives, for garnish, optional

    2 tsp Soy sauce
    2 Tbps Vinegar
    1 tsp Sugar
    1/4 tsp Crushed red pepper
    2 tsp lightly toasted sesame seeds

    In a mixing bowl, combine the flour, water, and eggs and mix gently until just combined. Add the shrimp, green onions, carrot, garlic, and salt and fold together briefly just to combine.

    Heat a large nonstick skillet over medium-high heat and, when hot, coat with 2 teaspoons of the vegetable oil. Add 1/4 of the pancake batter and use a spoon to spread into a 6 to 8-inch circle, trying to get the filling ingredients as evenly spread out as possible.

    Cook about 4 minutes and once the pancake has begun to set and is golden brown on the bottom, flip the pancake to the other side, pressing with a spatula to compress ingredients.

    Cook until golden brown on the second side, about 2 minutes longer, transfer to a warm plate and cover loosely with foil to keep warm while you prepare the remaining pancakes.

    Once all of the pancakes are ready, cut them into wedges and serve warm, sprinkled with the chives and with the dipping sauce in small bowls for dipping.

    I can give you a recommendation for a snack – Kanda Bhaji [Onion Pakora], one of my favourite. I wrote a not so good recipe for it [which made me abandon my attempts to write more]. Its the only one of the two posts in my “Eater’s Paradise” category. You’ll find it easily.

    Others are a bit complicated but you should try making Biryani, preferrably Chicken though Mutton works too. You’ll find a plethora of recipes if you do a google on that. Oh and try some Chhole too [chana masala], delicious if you like spicy things, its my fav veggie dish.

    Well not really, we get most of it easily here… don’t know about the UK. This is actually a speciality of my region – Maharashtra.

    My mom uses these ingredients –
    1)Salt [loads of it to squash the juice from the onions]
    2) onions of course
    3) gram flour [chickpea flour]
    4) red chilli pepper
    5) and a tiny quantity of black pepper.

    I’d still recommend you check some “official” recipe first. No use going on guy’s advice! :P

    I’ll sue you if it’s a vegetarian restaurant though.

    I can’t make anything at all. All I can suggest is try putting chips into noodles and vanilla ice-cream into coke, it’s fun!

    @Ash: Dude, chips in noodles can taste amazing if you’ve got the right flavor of chips. And that’s not weird. The weird thing is dipping chips in Coke and then eating them. I do that too, btw :P

    timethief’s recipe – absolutely delicious. I usually make it with prawns, but chicken would work well. I think it is Vietnamese? Have a look at recipes that only have a couple of ingredients, or/and 2 or 3 stages to making them. I am too shy to link to my blog ;) but there are some recipes in there (not many yet, but some) that I teach to men who are beginner cooks.

    Cat, one of the best places i’ve *ever* found to get help on recipes is the forums over at discuss cooking:

    they’re really helpful for newbies & have pantsloads of tips for the experienced cooks, too. forums are searchable, so if you’re looking for new rice recipes, just cruise around searching rice over there. good luck!

    Potato Pancakes (Latkes for Hannukah or any day)

    4 medium size potatoes
    1 small onion
    1/2 cup pancake mix
    1/2 cup oil
    1 tsp. salt
    2 Tbsp. sour cream
    2 eggs
    1/2 tsp. pepper
    dill for garnish

    Peel potatoes and grate into a bowl. Pour off extra liquid. Peel onion and grate into potatoes. Add eggs, pancake mix, sour cream, salt and pepper. Mix well.

    Heat oil until it sizzles. Drop a tbsp. at a time of batter into hot oil. Flatten with a pancake turner. When bottoms are brown turn them over. When done remove and drain on paper towel lined plate. Serve with applesauce, sour cream and dill or just plain.

    Serves 6-8 as a dip for crackers or vegetables or as a spread for your veggie wrap or sandwich spread

    1 – 15 oz can chickpeas drained or substitute 2 cups sprouted chickpeas for the canned ones
    2 cloves garlic minced
    Juice of 1 lemon
    ½ teaspoon sea salt
    2 tablespoons tahini
    2 Tablespoons extra virgin olive oil

    Place all ingredients in your food processor with the S blade and puree to desired consistency. I generally add a little purified water to get a nice creamy consistency.

    Taste and adjust flavors to your individual liking.

    For variety try adding ½ cup fresh parsley and ½ teaspoon cumin for a more Middle Eastern flavor.

    P.S. Is there a prize for the person who submits either the most or the best recipes? …*lol*… :-D

    Yeah, I’ve been at her blog a few times and have some recipes bookmarked, including Spinach tortellini soup and others.

    You know, I love Humus and eat it literally every other wekk, but I’ve never thought about making it myself. I guess I’m too used to buying things.

    And I’ve never thought of potato pancakes. Thank you very much. :)

    There isn’t a prize, I’m sorry! However I shall blog about every recipe I’ll cook and hand out some link love. And knowing it’ll convert me to someone who actually cooks more often, but I’m sure no one but me will be too excited about that!

    This is one of my favorite throw together dishes. Oh how I miss having an oven I can really cook in. A toaster oven is a pain.

    Sweet and Sour Make Ahead Chicken

    2 pounds chicken parts (I skin them)
    16 oz bottle sweet and sour sauce
    1 envelope dry onion soup
    1 c peach or apricot preserves
    1 can drained pineapple chunks

    Mix sweet and sour sauce, onion soup, preserves and pineapple. Pour over chicken. Marinate at least 1 hour. Bake in a 350 degree oven until chicken is done, about 1 hour.
